Hello everyone,   Welcome to our first online Newsletter!  Also this being the first newsletter for 2009 I’d like to say I hope you all had a wonderful break over the holidays. My team enjoyed the break here at Gold Coast Organics for Everyone, as it had been a very busy year.  However, after our holiday we are all very happy to be back into the swing of things and even happier knowing that once again we’ll all be eating fresh organic foods.  

As we look towards the future, we’re excited about what’s in store for the organic industry in Australia as more and more people come to realise that organic food isn’t a luxury, but a necessity - it’s the way food is supposed to be. We look forward to sharing that with you all. Enjoy!  

What’s in season?  

  • Asparagus – absolutely beautiful

  • Pineapples – amazing taste

Recipe of the Month  

Beetroot Tzatziki

1 bunch beetroot, leaves cut off, with about 5cm stem left on the beetroots, roots intact

1 large clove garlic, peeled

1-2 tbsp freshly squeezed lemon juice

2 x 300mL containers reduced-fat plain yoghurt

Salt and freshly ground black pepper

Mint leaves to garnish

Grilled pita bread to serve

1.       Cook beetroot in salted boiling water until tender, about 30 minutes.  Cool a few minutes, then run under cold running water, rubbing off the skin.  Trim root and stalk ends.  Grate beetroot, either on a hand grater or with the coarse blade of a processor.  You should have about 2 cups.

2.       Place garlic in a mortar or bowl with a pinch of salt.  Puree with a pestle or a spun.  Combine purée in a bowl with grated beetroot, 1 tbsp of lemon juice and yoghurt.  Mix well, season with salt and pepper, adding more lemon juice if desired. 

3.       Refrigerate 1 hour, or until ready to serve.

4.       Garnish with mint.  Serve with grilled pita.
